The report further detailed that the gumbo was later moved to a refrigerated trailer and thawed prior to being served, raising significant concerns about proper food handling procedures and temperature control throughout the process.

Health officials noted several other compliance failures during their inspection. These included a lack of temperature logs documenting proper food storage conditions and improper storage practices that could compromise food safety.
Inspectors specifically observed bags of frozen shrimp and crab with labels stating "keep frozen," indicating potential temperature abuse during storage. Additionally, authorities found that some food sources used after the first day of operation were not listed on the approved permit, and meals prepared more than 24 hours in advance were not properly dated for freshness tracking.

The restaurant operators cooperated fully with inspectors and received education on proper food safety measures, including rapid cooling techniques, appropriate thawing procedures, and proper date marking for prepared foods.
